How being a mom affected my career....in a good way!

I think every working mom has the same fears prior to having her baby...how am I going to manage being a mother and hold a successful career at the same time? Something has to give!!

I remember thinking that early on those first few months I was pregnant with Lilly.  From my constant morning sickness and feeling of wanting to sleep all day, I thought to myself how am I going to do this once the baby is actually here???

But, I will tell you....being a mom has actually helped my career in so many ways. It changed me....... for the better. 

1. Schedules - I think the biggest thing I have learned is that yes, you need to have a schedule, you need to abide by it.  I need to stay organized now to get everything done in those few hours before and after work, and that has led to more organization in my work life as well. There is no time to waste!

2. Mountain out of a Molehill - I used to let petty things at the office bother me.  I realize now that it's not worth stressing over the little things. I am at the office to do a job, do it well,  and then go home.  

3. Disconnect - along those same lines, I used to bring my work emails home with me on the weekends. I was so worried about missing anything.  I realize that it is better to do work while I am at work. I put more effort into it and produce better work, rather then trying to juggle more on the weekends. 

4. Be the person I would want my daughter to be - I realize now that everything I do, I am doing for my daughter and our family.  I want to be the type of inspirational mother that my daughter looks up to one day. It motivates me in my job and my life to do my best.

Fast Easy Desserts for the Working Mom....Valentine's Day Sweetheart Rice Pudding!!

Sweetheart Rice Pudding

I thought I would turn this week's dinner recipe into a Fast and Easy Dessert Recipe in honor of Valentine's Day approaching!! Valentine's Day reminds me of everything sweet and delicious. I am sharing with you my own adaption of my favorite Barefoot Contessa Recipe for simple easy to make Sweetheart Rice Pudding!!    (Added bonus...It's Gluten Free!!)


  • 3/4 Cup of Golden Raisins - soaked in boiling hot water 
  • 3/4 Cup of White Basmati Rice - I use Texmati brand, if you can get this type do it!
  • 1/2 teaspoon kosher salt
  • 5 cups of half-and-half
  • 1/2 cup of sugar
  • 1 extra large egg, beaten
  • 1 1/2 teaspoons pure vanilla extract
A little trick my mom taught me...... before starting the Rice Pudding..... let your Golden Raisins soak in a little bit of boiling water in a small bowl and set aside.  Make sure you drain them before adding to the rice later.

Combine the rice and salt with 1 1/2 cups of water in a medium stainless steel saucepan

Bring to a boil, stir once, and simmer, covered on the lowest heat for 8 to 9 minutes, until most of the water is absorbed.  If your stove is very hot, pull the pan halfway off the burner!

Next, stir in only 4 cups of the half-and-half.....


Add the sugar.........bring to a boil again!

Simmer uncovered for 45 minutes, until the rice is very soft.  Stir often, particularly toward the end. 

Slowly stir in the beaten egg and continue to cook for 1 minute. 

Remove your pan from the heat and add the remaining cup of half-and- half.....

Add the vanilla....

And add the raisins (make sure you drain the raisins!).  

Stir well!!

  Pour Rice Pudding into a bowl....

Cover bowl with a piece of plastic wrap directly on top of the pudding to prevent a skin from forming!!

Ta da! You are done!! This Rice Pudding can be served warmed or chilled.  Personally, I like to refrigerate it and serve it chilled with some cinnamon sprinkled on the top!!


This Valentine's Day, if you want a Fast and Easy Dessert to make that special someone in your life, try  Sweetheart Rice Pudding Recipe!! I made it for Luke and Lilly last night and they both loved it!!! I doubled the recipe so we have enough to last us a few days!

Day 2 - DIY Valentines Day Cards

Anyone who knows me knows that I love a good card.  I think it is so important to remind the people you love how much they mean to you, and handwriting it in a card has such an extra special meaning! I have saved every card Luke has given since we started dating....I love looking back and reminding myself how far we have come together!  Below are some of the DIY cards I found that I cannot wait to make Luke this Valentine's Day!!

How cute are these DIY Valentine's day cards? So easy to make!! You just need some pink and white construction paper, red pens and a red marker! The other items you can find around your house!!  I am excited to have Lilly help me make them this weekend for Luke!!

Why I'm not a stickler for bed time....Countdown to Valentines Day

Another Super Bowl win for the New England Patriots......and another night Lilly was up way past her "bed time".  



I know what all the books tell us: make sure our children are on schedules and follow a strict bed time. As a working mother,  I find it almost impossible to get Lilly fed, showered and in bed every night by 7pm! Now, don't get me wrong, I am not judging anyone who does follow a strict bedtime, as I am sure that's why your children sleep perfectly through the night,  I just realized this morning, that, finally, I am ok with the fact Lilly does not!

First off, Luke and I get home from work, the earliest, at 6:20 p.m.  I refuse to only spend 30 minutes with Lilly when we get home. So, right off the bat, I started to extend her bedtime until closer to 8pm.

Second, we always take Lilly to dinner with us or to friends houses on the weekends.  Maybe it's because we are gone all week, but I love having Lilly around me as much as possible when we are home! And, she loves it too! Yes, that means sometimes we get home after 9 p.m......but trust me, the girl is not complaining! She is normally enjoying herself, having the  best time!

Third, I think the fact she can adjust and sleep in different places and at different times has actually helped her.  She can travel better and is very social!!

Take last night for example....we were at friend's house, having a great night and yes, go ahead judge me....she was up until 10 p.m. watching the game!! And, surprise surprise..she was fine! Happy as could be last night and then slept through the night and up early this am in a great mood!

So, if you are anything like me and not really conforming to a perfect bed time every night.....don't feel bad about it! Do what works for you and your family.  If that means going to bed a little later so you can spend time together... you know I won't judge :)
